A smoky compound butter of roasted bone marrow, smoked garlic, and PEI butter spiked with super-hot Pepperpocalypse pepper mash — made for melting over beef ribs.

Method

  1. 1Smoke the canoe-cut marrow bones and garlic low and slow on the Pit Boss with oak, hickory, and maple pellets.
  2. 2Scoop the soft, rendered marrow out of the bones.
  3. 3Mix the marrow and smoked garlic into softened Cows Creamery unsalted butter.
  4. 4Stir in Rudy's Pepperpocalypse pepper mash — extreme heat warning, a little goes a long way.
  5. 5Melt the finishing butter over juicy smoked beef ribs, steaks, or burgers.
