Method

  1. 1Start with fully ripened red jalapeños — that's what makes a true chipotle.
  2. 2Set up your smoker (offset, barrel, or kettle all work) for a long, low and slow smoke with your favourite wood.
  3. 3Arrange the jalapeños in a single layer and smoke low and slow until they are perfectly dried and packed with rich, smoky heat.
  4. 4Store the chipotles whole, or grind them into powder for that smoky kick in dry rubs, BBQ sauces, marinades, chili, and beans.
  5. 5Use them on pork, beef, chicken, and ribs for next-level smoke-on-smoke flavour.
