Applewood & Sugar Maple Smoked Chicken Halves

Whole chickens split in half, marinated in Balsamic Burn, smoked over applewood and sugar maple, and finished with a chipotle-rosemary compound butter.

Method

  1. 1Split three whole chickens in half and marinate them in Heat from the Hammer Balsamic Burn.
  2. 2Mix butter with Southshore sea salt, chili lime sea salt, cracked black pepper, fresh rosemary, and homemade chipotle powder.
  3. 3Run the offset smoker at 275–300°F with a blend of applewood and sugar maple.
  4. 4Smoke the chicken halves for about 2 hours, until juicy and cooked through.
  5. 5Finish each half with the compound butter and serve.
