Method

  1. 1Add the moonshine to a saucepan and gently simmer for 3–5 minutes to cook off the alcohol, leaving bold flavour without the burn.
  2. 2Whisk in the hot honey and ketchup over low heat.
  3. 3Add the vinegar, Worcestershire, mustard, and spices.
  4. 4Simmer for 15–20 minutes, stirring often, until smooth and glossy.
  5. 5Adjust the thickness with a splash of water or apple juice if needed.
  6. 6Cool slightly before using — the sauce thickens as it rests. Brush on chicken, ribs, or pulled pork, or glaze fish right at the end of a charcoal cook.
