Method

  1. 1Chop or shred the leftover smoked chicken from a previous cook.
  2. 2Layer a blue corn tortilla with smoky chicken, cherry tomatoes, white onion, and fresh sliced jalapeños.
  3. 3Spoon on the white cheese and jalapeño salsa queso dip and fold the tortilla over.
  4. 4Toast until the cheese melts and the tortilla crisps up.
  5. 5Slice into wedges and serve with extra queso for dipping.
