It is a fire problem, not a pizza problem
The obvious skill in a wood-fired pizza oven looks like dough handling. Spend a day next to one and it becomes clear that the real work is fire management, and it is continuous. Every log placed, every time the fire is raked, every pizza that goes in changes the environment for the next one.
That is the same discipline as running an offset smoker, just compressed into minutes rather than hours. The oven wants to be fed steadily rather than in bursts, and it wants a fire that is burning cleanly. A neglected fire drops the dome temperature; an overfed one scorches the toppings before the base is cooked.
Anyone who has managed a live fire for barbecue recognises the rhythm immediately. The variables are the same — fuel, air, position, timing — and so is the fact that the person doing it well makes it look like nothing is happening.
The numbers that matter
The working range is roughly 500 to 600°F in the dome, and the stone floor needs to stay above about 400°F. Those two numbers do different jobs and both have to be right.
Dome temperature cooks the top — it is the radiant heat that blisters the crust edge and melts the cheese. Floor temperature cooks the base, by conduction. If the floor drops, the base goes pale and soggy no matter how good the dome looks, and it takes real time to recover because you are reheating a mass of stone rather than air.
That is why a busy service is harder than it looks. Every pizza that goes onto the stone pulls heat out of it, so the fire has to be managed to keep putting heat back in between bakes. Get behind and the floor never recovers.
Why oak
Oak is the choice for good reasons rather than tradition alone. It burns clean, which matters enormously when the food is in the same chamber as the fire and cooks in a couple of minutes — there is no time for bad smoke to burn off before it reaches the pizza.
It also burns consistently and holds a coal bed, so the heat output is predictable across a service rather than spiking and collapsing. That predictability is worth more in a working oven than any flavour consideration.
And it is restrained. On a sourdough base, the flavour comes from a long fermentation; a strongly flavoured wood would sit on top of that rather than underneath it. Oak supports the crust instead of competing with it.
Two minutes and constant rotation
At those temperatures a pizza cooks in a couple of minutes, and the heat inside the oven is not even — one side faces the fire. So every pizza is turned repeatedly as it bakes, and the peel work is close to constant.
That short window is why the preparation has to be finished before the pizza goes in. There is no adjusting once it is on the stone; a topping that needs longer than the base will not get it.
It also means consistency is a craft skill rather than a setting. There is no thermostat and no timer that can account for where the fire is, how hot the stone is at that particular moment and how heavily that particular pizza was topped. The person on the peel is making those judgements every ninety seconds, all service.
