Method

  1. 1Trim the pork money muscle into a uniform cylindrical shape so it cooks evenly.
  2. 2Season generously with Double Double Coffee Dry Rub.
  3. 3Smoke on a pellet smoker at 250°F for 5–6 hours until it reaches 170°F internal.
  4. 4Wrap in foil with 2 tbsp butter and ¼ cup Carolina BBQ sauce and finish in the oven at 275°F until 203°F internal.
  5. 5Rest at least 30 minutes, then slice thin on a meat slicer.
  6. 6Build the pizza: dough, pizza sauce, mozzarella, and sliced smoked pork.
  7. 7Cook in a wood-fired pizza oven until the crust is crispy and the cheese is bubbling, then slice and serve.
