Method

  1. 1Coat the money muscle with Pollo y Pescado hot sauce as a binder and season with Coastal Cookhouse Chipotle BBQ Rub.
  2. 2Inject the muscle with more of the hot sauce for a deep, fiery kick.
  3. 3Smoke low and slow on the pellet smoker with a hickory, oak, maple, and cherry pellet blend until it hits 203°F internal, then rest.
  4. 4Roast the potatoes, cherry tomatoes, red onion, and garlic, then blend them with Knorr chicken stock into a rich bisque.
  5. 5Slice the money muscle into medallions and serve over the bisque, topped with fresh green onion.
