Apple Peach Fire BBQ Sauce

A bright, glossy fruit-based BBQ sauce built on simmered fresh apples, peach iced tea, and hot honey — made for glazing pork and poultry.

Method

  1. 1Add the diced apples and ½ cup of liquid to a saucepan and simmer gently, uncovered, for 12–15 minutes, until the apples are completely soft and mashable.
  2. 2Mash thoroughly or blend smooth — this creates the sauce's natural sweetness and thick body.
  3. 3Stir in the ketchup, peach iced tea, hot honey, brown sugar, vinegar, Worcestershire, mustard, and all the seasonings until fully combined.
  4. 4Simmer uncovered over medium-low heat for 25 minutes, stirring every few minutes, to cook off the alcohol, concentrate the peach flavour, and thicken the sauce — do not hard boil.
  5. 5Taste and adjust: add vinegar if too sweet, ketchup if too spicy, a splash of water if too thick, or simmer 5 more minutes if too thin.
  6. 6Cool for 20 minutes before bottling and refrigerate at least 4 hours before use for best flavour.
  7. 7Brush on ribs or chicken in the last 10–15 minutes of the cook, mix into pulled pork, glaze smoked sausage, or use as a dipping sauce.
