Method

  1. 1Set up a charcoal grill for two-zone cooking.
  2. 2Season the whole snapper with Island Girl Foods & Spice Affairs BBQ seasoning and stuff with sliced shallots and fresh cilantro.
  3. 3Grill gently over indirect heat until it reaches 145°F internal.
  4. 4Brush with Bahamas Steamed Sauce like a BBQ sauce for a final flavour boost.
