Method

  1. 1Sauté the chopped onion in the stock pot until soft.
  2. 2Add the garlic, salt, and pepper and cook until everything is fragrant and translucent.
  3. 3Pour in the Coldstream Clear Nova Scotia light beer — the perfect flavour profile for mussels without overpowering their natural sweetness.
  4. 4Add the full pack of Canadian Cove PEI mussels and steam for 4–7 minutes, just until every mussel pops open.
  5. 5Finish with fresh parsley and serve straight from the pot with the beer broth.
