Method

  1. 1Season the beef pot roast well on all sides.
  2. 2Sear the roast in a hot Dutch oven to build a deep, rich crust, then set it aside.
  3. 3Slow-cook the red onions, garlic, and carrots in the pot, then stir in the tomato paste to bring everything together.
  4. 4Pour in a full litre of Blomidon Estates Baco Noir and let the wine reduce.
  5. 5Nestle the beef back into the pot with the broth, then transfer to the oven and braise low and slow until fall-apart tender.
  6. 6Serve the beef over creamy garlic mashed potatoes and top with fresh chives.
