The breast is dry

The skin burnt
Direct heat with a sugary marinade. Keep the chicken entirely on the indirect side, and pat it dry so there is no wet honey layer sitting on the surface.
The skin is soft and pale
The grill ran too cool, or the halves went on wet. Aim for 350°F and dry them properly. A few minutes closer to the coals at the very end will crisp them.
The marinade separated
Stirred rather than whisked, or the honey was cold. Warm the honey slightly and whisk hard — the Dijon will pull it together.
It took much longer than expected
Halved birds vary a lot in size, and lid thermometers read high. Put a probe at grate level, and remember 190°F is a long way past 165°F — the last 20 degrees take real time.
Flare-ups scorched one side
No drip tray, or the halves were too close to the coals. Use a tray, keep them fully on the indirect side, and shut the lid to smother any flame.

Ways to change it up

Spatchcock instead of halving
Remove the backbone but leave the bird whole and press it flat. Same cook, more dramatic presentation, slightly harder to portion.
Reserve marinade as a sauce
Set some aside before the raw chicken goes in and brush it on in the last few minutes, or serve it at the table. Same flavour, no food safety issue.
Milder
Halve the hot sauce and make up the volume with more olive oil and a splash of vinegar. The structure of the marinade is unchanged.
Thighs only
