Method

  1. 1Season the chicken thighs with Sassy Chicken seasoning.
  2. 2Sear the thighs skin-side down in the frying pan with butter until the skin is golden and crispy, then finish cooking through and set aside.
  3. 3Cook the pasta while you build the sauce.
  4. 4Saute garlic and shallots in the pan, then deglaze with Tidal Bay white wine to lift all the flavour.
  5. 5Add fresh rosemary and thyme and mount the sauce with butter for a rich, herby finish.
