Offset-Smoked St. Louis Ribs

St. Louis ribs smoked over hardwood on a custom offset, wrapped with butter and Super Sauce, then finished until sticky, smoky, and tender.

Method

  1. 1Season the trimmed ribs with Unreal Pepper Rub to build a bold, slightly spicy crust.
  2. 2Run the offset smoker at around 250°F with clean-burning hardwood.
  3. 3Smoke the ribs unwrapped for the first 4 hours to absorb maximum smoke and develop rich colour and crust.
  4. 4Wrap the ribs in foil with a generous layer of butter and Super Sauce and return them to the smoker for 1 hour to tenderize.
  5. 5Unwrap and smoke for a final hour so the sauce tacks up and the ribs finish beautifully.
  6. 6Rest briefly, slice, and serve.
