Method

  1. 1Coat the bone-in country rib chops generously with homemade Kansas City dry rub.
  2. 2Set up the charcoal grill with a hot direct zone and a cooler indirect zone.
  3. 3Sear the chops over high direct heat to build charred grill marks and lock in moisture.
  4. 4Move the chops to indirect heat to finish cooking slowly.
  5. 5Just before they reach 145°F internal, glaze with Stingin' Hot Honey for a sweet, sticky finish.
  6. 6Pull the chops at 145°F, rest briefly, and serve.
