Method

  1. 1Set up a charcoal grill for two-zone cooking with quality lump charcoal, and set a brandy barrel wood chunk on the grate above the cool zone so it smoulders and adds sweet, aromatic smoke.
  2. 2Coat the wings generously with Sassy Chicken BBQ Seasoning.
  3. 3Once the grill climbs above 500°F, place the wings on the grates so the high heat renders the fat under the skin and crisps it.
  4. 4Cook until the wings reach 190°F internal so the connective tissue fully breaks down and the meat stays juicy.
  5. 5Toss the hot wings in Sweet With A Little Heat BBQ Sauce and serve.
