Maple Habanero Barrel-Smoked BBQ Chicken

Chicken hung over hickory and charcoal in a barrel smoker, seasoned island-style and finished with a sweet-heat maple habanero BBQ sauce.

Method

  1. 1Fill the Bronco's charcoal basket about three-quarters full with Kingsford charcoal and light a small chimney of coals.
  2. 2Pour the lit coals on one side of the basket and set a couple of hickory chunks on top.
  3. 3Open the intake vent a quarter of the way and the exhaust vent halfway to hold a steady 300°F.
  4. 4Season the chicken with Island Gurl Foods x A Spice Affair BBQ Seasoning.
  5. 5Hang the chicken above the coals so the juices drip down for that char-broiled flavour.
  6. 6Cook low and slow until the thickest part of the breast and thigh reads 165°F internal.
  7. 7Finish with Island Gurl Foods Maple Habanero BBQ Sauce for sweet heat, then serve.
