Cooked ribs keep 3–4 days refrigerated. Store the rack whole rather than cut into bones, wrapped tightly, and cool before sealing.
Reheat wrapped in foil at 250°F for 20–30 minutes with a splash of apple juice or cider vinegar, then open for the last five minutes if you want the glaze to firm up again. Avoid the microwave, which makes rib meat rubbery.
They freeze well for about three months. Freeze the rack whole and wrapped, or vacuum-sealed, and thaw overnight in the fridge. The best reheat is a sealed bag in barely simmering water, which brings them back without exceeding the temperature they were cooked to. Mango chutney itself keeps for weeks refrigerated once opened.
Because the rub points that way. An Indian-spiced rub with cumin, coriander and garam masala sits far more naturally under a sweet-tangy fruit chutney than under a molasses-and-tomato BBQ sauce. Chutney is also less sugary than most BBQ sauces, so it is a little less prone to burning.
It keeps the surface moist and tacky, which helps smoke keep adhering, and it slows the bark setting so it develops more evenly. It does not meaningfully add moisture to the meat. Wait an hour or two before the first spritz so the rub has bonded, or you will simply wash it off.
Because they come out of foil wet. That 30–40 minutes uncovered dries the surface and firms the bark back up, turning soft, braised ribs into sticky ones with a proper crust. Going straight from wrap to plate is the most common reason home ribs come out soggy.
It seasons the braising liquid rather than just the surface, so the flavour distributes through the meat as it braises. It is a small step that makes a noticeable difference, particularly with a spice-forward rub that benefits from contact with fat.
In the last ten minutes or so. Chutney, jam and BBQ sauce are all sugar-heavy and burn well below the temperature the ribs are cooking at. Ten minutes is enough for the glaze to warm through and tack onto the bark.
The bend test — lift the rack a third of the way along with tongs and it should bend under its own weight with the surface cracking. Thermometers are unreliable on ribs because the meat is thin and close to bone.
