Method

  1. 1Coat the ribs generously with Sweet Chipotle Dry Rub to build a bold bark.
  2. 2Run the offset smoker between 225°F and 275°F over sugar maple.
  3. 3Smoke bone-side down until 165°F internal and the bark is well set.
  4. 4Wrap in butcher paper with a couple knobs of butter and Super Sauce, then return for 1 hour.
  5. 5Unwrap and smoke another hour to let the sauce tack up.
  6. 6Cook to 203°F internal, then rest and slice.

Pork
